Sweet Potato Encrusted Hog Snapper  Recipe

Ingredients

1/2 cup lowfat buttermilk

1 teaspoon freshly minced garlic

1/2 teaspoon sea salt

1 teaspoon fresh ground black or white pepper

4  (approx. 1 1/2 lbs total of Hog Snapper fillets or other firm white fish such as Grouper or Orange Roughy 

3/4 to 1 cup mashed sweet potato

4 tablespoons unsalted butter, divided

Preparation

Combine buttermilk, garlic, salt, and pepper. Place fish in buttermilk mixture, turning to coat; let stand 3–4 minutes.

Preheat large sauté pan on medium-high 2–3 minutes. Spread the mashed sweet potato onto a plate.  Press each fish fillet into the sweet potato, and coat both sides well. 

Place 2 tablespoons butter in pan, then add fish; cook 4 minutes, turning once. 

Place 2 tablespoons butter in center of pan. Turn fish (using spatula), distributing butter under each fillet; cook 3 more minutes or until golden and fish flakes easily. 

Optional Cilantro Lime Sauce

Cilantro 
Garlic 
Lime 
Honey 
Ground coriander 
Sea Salt
Olive Oil 
Mix about a cup of olive oil with about a teaspoon each of the other ingredients.  Adjust to your own taste.  Give it a quick mix with an immersion stick or your blender.  Pour into a small bowl for dipping, or pour over your finished Snapper.  

Make It A Whole Meal

Add a fresh salad made with mixed dark greens, extra virgin olive oil and roasted walnuts, as a healthy side.

Feeling like dessert?  Keep it simple with baked apples sprinkled with brown sugar and cinnamon and a dash of nutmeg.  Add a dollop of plain vanilla ice cream or whipped cream to your baked apples when serving.
