Sweet Potato Encrusted Hog Snapper Recipe Ingredients 1/2 cup lowfat buttermilk 1 teaspoon freshly minced garlic 1/2 teaspoon sea salt 1 teaspoon fresh ground black or white pepper 4 (approx. 1 1/2 lbs total of Hog Snapper fillets or other firm white fish such as Grouper or Orange Roughy 3/4 to 1 cup mashed sweet potato 4 tablespoons unsalted butter, divided Preparation Combine buttermilk, garlic, salt, and pepper. Place fish in buttermilk mixture, turning to coat; let stand 3–4 minutes. Preheat large sauté pan on medium-high 2–3 minutes. Spread the mashed sweet potato onto a plate.
